Gavarnie are proud to grow and produce capers here in Australia, delivering to you a better-quality ingredient to improve your dishes. Capers are the unopened flower buds of the caper bush, harvested early in the day and preserved in minimal salt. Harvest commences in early November through to March. A delicious addition to fish, chicken, pastas and salads, Gavarnie Australian Capers are ready to eat straight out of the jar. Not bottled in large quantities of salt or vinegar, you don't need to rinse our capers and wash away the flavour. We use just 5% salt-to-weight, which helps release the caper 'mustard' from the buds, acting as a powerful natural preservative.
